Would you read a book series based on this?

I would read it, as long as it wasn't JUST about that. I think it would be most interesting if you wrote it from the perspective of someone who didn't sign it, but influenced it a lot. I would focus on the freemasons order, perhaps a girl trying to influence things indirectly. Make it smart, political and mysterious. Most will know how your story will end, so make it about the journey, and throw in some twist kept out of the records. Perhaps she discovers a plot that would be the demise of america? Maybe there's a series of mysterious clues? I think you could make something very exciting out of something typically dull. Some romance couldnt hurt, too. And I know tons of people that would read it.
